Taste Test: Bacon Chocolate Bar

Vosges Mo's Bacon Bar, $7
Fancypants chocolatier Vosges–a.k.a. Vosges Haut Chocolat–has experimented with some killer combinations in the past, adding ingredients like ginger, caradamom, sea salt, and chili peppers to deep, delicious chocolate bars. Plenty of other upscale chocolate makers do similar things, but how many have taken the plunge into bacon? On the packaging, founder Katrina Markoff recounts her childhood spent mixing flavors, including a flirtation with bacon and chocolate at age 6.
Taste: To be clear, this is bacon and chocolate, not bacon-flavored chocolate. If you let a piece melt in your mouth, you'll be left with yummy, chewy bits of applewood-smoked swine. The combination of sweet and salty (and fatty!) is actually quite delicious–moreso the longer you let it linger. The chocolate itself is deep milk–41% cacao–and the sweetness nicely offsets both the bacon and the "Alder wood smoked salt." Only one lucky taste tester got a large-ish chunk of bacon, but there were plenty of smaller ones, including a bit that didn't allow two squares of chocolate to separate. Three squares, which is more than you'll ever want to eat at one sitting, provides 12 grams of fat, which isn't bad considering you're eating, y'know, bacon and chocolate together.
