Even out-of-towners may recognize the smiling face of Christopher B. Stubblefield, thanks to his barbecue sauce being stocked in supermarkets nationwide. In the Korean War, “Stubb” proved he could cook as well as he could shoot, earning two Purple Hearts and praise from fellow soldiers for heating chili on a tank’s tailpipe, a skill he then parlayed into one of Austin’s greatest success stories. Since 1985, Stubb’s has encouraged diners to “get sauced” on cold beer and bountiful plates to the tune of live music from local and national acts. Succulent barbecue staples (ribs, chicken, and brisket) and sides (potato salad, pinto beans, fried green tomatoes) require a forest’s worth of napkins, which you may obtain from the very, very low-key waitstaff. Sunday gospel brunch with fried catfish and a make-your-own bloody Mary bar elicits more than one resounding “hallelujah.”
