Institution is an overused word, but few eateries in Denver live up to the term like the Merc. With a leftist-feminist-activist spirit that imbues everything from the menu to the décor, the hallowed establishment serves as much organic, whole-grain, and local, small-farm fare as possible—from steaks and salmon to tofu chops and tempeh. Microbrews are poured at the small bar, weekend brunch is the best deal in town (and one of the few places you can easily get a table on a Sunday morning), and the entertainment calendar sports everything from swing dancing to pagan theater.
