Bored of aimless browsing at Madison's popular farmers markets? In Stand By Your Stand, Decider heads out to find the best and strangest offerings, and tips on how to use them.
The source: Fall River, Wis.
Wares: Grass-fed Highland cattle and Berkshire pork in a variety of cuts, including steaks, hamburgers, sausages, brats, hocks, and tenderloin. Jersey Giant asparagus is also available in the spring.
Best deal: Beef snack sticks for $1.25 and smoked beef sticks for $1.50.
Weirdest item: Fountain Prairie sells every part of the cow but the moo, so this is the place to pick up some livers, stomachs, tongues, and kidneys for your special offal pie.
Serving suggestion: John and Dorothy Priske raise their steers on grass and grass hay without hormones or antibiotic feed additives, resulting in tender, flavorful beef. John loves to serve the ground beef as hamburgers because most people eat burgers more regularly than steaks and can really taste the quality difference.
Find it at: Dane County Winter Farmers' Market, Saturdays, 8 a.m. to 12 p.m. each Saturday through Apr. 11 at the Madison Senior Center.
