Great Job, Internet!: Inside the quest to break fruit's monopoly on seltzer flavors

Creator Ruby Dubie has been experimenting with making seltzer from cinnamon, roses, pistachios, and more, with some "refreshing" flavors on the way.

Great Job, Internet!: Inside the quest to break fruit's monopoly on seltzer flavors

Seltzer: why is it always fruit-flavored (when not plain)? This is the question that Instagram and TikTok creator Ruby Dubie asked herself when she started her viral series, “Will it Seltzer.” The creator was inspired by visiting the grocery store and realizing that all of the flavors she saw were fruit-based. “I love fruit, don’t get me wrong, but I also love lots of other flavors, and they deserve their time in the spotlight,” she tells The A.V. Club by email. She started with pistachio, which she says was “delicious” before moving onto other flavors.

The method is fairly simple. Dubie soaks ingredients like pistachios, rose petals, cloves, cinnamon, and whatever else in a mason jar of water for a day or two. Then, she turns the water into seltzers with a SodaStream, and assigns them a numerical ranking to keep track of the highs and lows of the experiment. Clove was an undeniable low of the experiment, earning the only perfect 0 score so far in the experiment. Cinnamon still lives in first place (as it’s both delicious on its own and very promising as a mixer with something like whiskey) while the most recent experiment, pumpkin spice, landed a more middling result.

Pumpkin spice was the 11th experiment in the series, and Dubie has no plans to stop. “Once I commit, I am in for the long haul. So this might go on for quite a bit, or at least until my seltzer machine gives out on me,” she writes. As for future flavors, she says she doesn’t want to give too much away, but teases, “I’ll just say that the people have been asking for specific ones, refreshing ones, and those might be coming sooner than they think.” Now, if you’ll excuse us, we have some rose petals to soak in water.
